Growing up I was incredibly lucky to be surrounded by fantastic grandparents whom I spent a lot of time with. My grandmother Margrethe, who to me was simply known as Besta, made the best waffles in the world! She never followed a proper recipe when she cooked or baked but simply went by taste and of course endless experience. She made three things exceptionally well, meatballs Kjøttkaker with potatoes and a nettle stew, Hardangerlefser and waffles Vafler. The meatballs and waffles were almost always on the menu as they were our favorites. Whilst the Hardangerlefser were made at the cabin in the summer.


I have taken on her joy and approach to cooking, and never follow a recipe unless I absolutely have to. Preferring simple comfort food to the more sophisticated dishes. My signature dish is easy, quick and delicious. Beautifully heart-shaped they remind me of Besta and makes me smile whenever I make them. I love mine served right from the waffle iron with Norwegian gjetost or with a little crème fraiche and homemade jam.




Breakfast Norway Signature dish

Rikke's Vafler

INGREDIENTS:
2 eggs

50g butter 

100 ml sugar 

500 ml milk 

400 ml flour

½ tsp vanilla sugar 

¼ tsp ground cardamom

¼ tsp ground cinnamon



Step 1

Slowly melt your butter in a saucepan and meanwhile in a bowl, whisk the eggs and sugar until smooth.

Step 2

Add milk to the mixture. Gradually and gently add the four, vanilla sugar, cardamom and cinnamon. Finally, mix in the melted butter. Then, let the batter rest in the fridge for 30 min.

Step 3

After resting you may need to add a little more milk to the batter to get the right consistency. Once you're ready with the consistency, add a little butter to your waffle iron before pouring in a ladle full of batter. Once golden on both sides your waffle is ready.

Step 4

Serve with Norwegian gjetost or with a dollop of crème fraiche and jam.
