INGREDIENTS:
4 chicken breasts, cubed, or
1 whole chicken, cut into pieces
3 tbsp olive oil
1 onion, chopped
1 green bell pepper, deseeded and chopped
3 cloves garlic, sliced
3 tbsp paprika
1 pinch dried chilli flakes
14 oz (400g) tinned chopped tomatoes in their juice
1 pint (475ml) chicken stock
Salt and pepper
In a heavy based casserole dish, heat the oil, then fry the onion and green pepper for about five minutes until softened. Add the garlic, paprika and chilli flakes, and stir well.
Pour in the chopped tomatoes and stock. Season generously with salt and pepper, then stir in the meat. Turn the heat up and bring to a boil, then lower the heat, cover and simmer for about an hour, until the meat is completely tender.
Serve immediately with pasta or gnocchi.
