Ful Medames

Breakfast Serves 4 to 6 people Egypt

Ingredients:

2 tbsp olive oil
1 large red onion, diced
2 tsp cumin powder
2 x 400g (3 cups) tins of ful medames beans, drained and rinsed
2 tomatoes, diced
2 tbsp lemon or lime juice
1 tsp salt
Bunch of chopped flat-leaf parsley




Step 1

Fry half of the onions with the cumin powder in the olive oil for three minutes.

Step 2

Add the ful medames beans and 100ml cold water. Bring to the boil and simmer for one minute. Crush the beans using a potato masher.

Step 3

Add the remaining onions, tomato, lemon juice and salt. Simmer for two minutes. 

Step 4

Garnish with lime wedges, boiled eggs, chopped tomatoes & cucumber, crispy fried onions, and warm pitta bread.
