
Alaskans are rightly proud of their wild salmon, and embraced sustainability long before it was popular. This simple sweet/savory glaze perfectly complements the flavor of the salmon.
INGREDIENTS:
2 tbsp butter
1 tbsp brown sugar
1 tsp honey
½ lemon, juice only
1 tbsp Dijon mustard
1 tbsp soy sauce
Salt and freshly ground pepper
1 large side of salmon (allow 6-8 oz/175-225g per person)
Preheat the oven to 350°F (175°C).
Melt the butter, brown sugar and honey in a small saucepan over a low heat. Remove from the heat and whisk in the lemon juice, mustard, and soy sauce. Season to taste and allow to cool.
Place the salmon on a large baking sheet lined with baking paper. Brush the glaze generously all over the salmon. Bake for 20-25 minutes or until cooked through.
